My wife doesn't like elk much either and won't hardly eat elk steaks, but she is OK with elk burger if a slight amount of beef tallow is added and really likes smoke rings made with elk and added pork. I had to make a "blend" but we both like the results. I would NEVER do anything with backstrap and tenders but steaks though! You have to draw the line somewhere.
