RE: PA bears?
I got mine processed into roasts and ground meat. The roasts were excellent. I put them in a big cast iron pot with beef broth, onions, celery, peppers, carrots, potatoes and bay leaves and roast them. They were better tasting, juicier and more tender than beef roasts. The burger was a little coarse and I grinded it with a finer grinding. Then I made loads of bear chili.
