If by fair chase you mean no fence then you are outta luck. If you want what most reasonable people would consider "fair chase" there are many high fence ranches in Texas that offer Axis and Fallow deer on huge acreage parcels well over 1000 acres each. Some, like the YO ranch have well over 40,000 acres. I'd call that fair chase. Of course there are some of those places that have large acreage but the animals are so tame and used to humans as well as clockwork feedings that it's not really hunting. I myself have never pulled the trigger at any of them but have been tempted to go after some of the exotics for the meat. Heard a lot about several of the African species that have some really good tasting meat. Just never could pull the trigger on it. Do some research on the bigger Texas game ranches and I am sure you will probably find what it is you are looking for.
