For me, the only time I have ever only taken one knife is on the Appalachian Trail and it was a Gerber Multi Tool. In 20 years in the Marine Corps I always had a Swiss Army knife in my pocket but I had a heavy blade too.

When I go hunting I always have my Kershaw for skinning, a heavy blade and a fishing fillet knife for boning.
