.270 would be fine...just get a buttstock pad if its too much...
Mornings and evenings are best times to see deer but they can be there anytime. typically you have to get there 1.5-2hr prior to sunrise and sunset IMO.
Good ol'e corn works if its allowed in your state which it sounds like it is...plus you might see hogs down there in FL...
