In my native CO, they hunt a lot of cougar. Since it is classified as a game animal if you take one you are required by law to utilize the meat. I've had it a few times and it is good. Sort of a light colored meat with a real delicate flavor. Both times I had it, it was cooked in a slow cooker with spuds, onions and carrots. Haven't tried it fried or grilled so I can't tell you how that would be.
I'm betting if you chunked the tail into small pieces and prepared it like oxtail that would be good too. I've never shot one personally but it is on my bucket list.
