I use the gutless method, and bone out all the meat.

Buck 110
boning knife
HD latex gloves
Lots of rope
tarp
8 small game bags
baby wipes
zip tie for tag
glasses so I don't cut myself
citrus spray to keep bugs off
snacks...i'm always hungry
