I'd give your Fish and Wildlife office a call. This is something they deal with all the time. And they're usually pretty good at catching people.

You may also want to consider posting your land. It may not solve the problem with this particular guy but it could possibly prevent any other problems from arising. It would also make a better case against the current guy if he keeps trespassing and hunting.
