There are different variables. I am not sure if whether and humidity plays a role but I have made batches of venison jerky using ground venison and a powder seasoning mix. My gun usually shoots the venison out in the same thicknesses but every year I make the same amount and the amount of time it takes to get the jerky right varies. Sometimes by several hours.
