You need to freeze it.. Just treat it like any other beef product in the freezer. Seal it in a plastic container, and freeze.

For keeping at room temp or in the fridge, you need a desiccant like silica gel or something to keep it dry. It won't keep but a couple weeks in dry weather at room temp so its best to put in fridge or just freeze it.

Frozen jerky does not have that " its frozen not fresh" thing because there's almost no water when you freeze it so it stays the same when you thaw it out.
