I was looking at that smoker the other day. I was thinking it would be good during the warmer times of the year when my propane smoker is just too hot.
As for wood. Smoke is a very personal taste thing. The amount of wood has a direct effect on how much smoke that will be produced. More wood = more smoke for a longer duration. My advice is to start with smaller amounts and work your way up to your taste preference. In my propane smoker I will fill the pan with chips. 8x8 inch pan x 2 inch deep. and I will not reload it at all. For me that is good. Others might run 2 or 3 pans.
