I have a cast iron skillet on the stove the whole time while I'm cutting into individual cuts and am always throwing a piece on to taste. No freezing just fresh. It's a tradition for me. So no need to freeze your venison. As others have said bear and hogs are a different story and should be taken care of accordingly.
