I would be concerned if you are talking about bear or wild hog. Freezing will kill trichnae but depending on the thickness of the cut and how it is packaged it can take up to 20 days at -10'F or 12 days at -20'F to kill trichnae. (I got this from my sausage making book by Rytek Kutas)

Deer or moose we regularly cut out the tenderloins on the day of the kill and fire up the grill and have a feed!!!
