I have a black bear hunt in the Ft. McMurray area coming up in May '13. The outfitter says the bears in his area are junky and no good for eating. I've heard the same thing about Snow geese, but they make some really good pepperoni.

Are there any game processors in Ft. Mac area, who'll make bear pepperoni, jerky, sausage? I'd like to try and at least utilize some of the animal, other than just the hide. If they were "fish" bears I'd understand.
