I put the scope in the rings without tightening the screws, then shoulder the rifle with my eyes closed. When I open my eyes and have the proper eye relief, I know the scope is the right distance from my eye. To level, I put the rifle straight in a vice, then sight a horizontal plane in the distance and line the horizontal reticle with it. Not real scientific, but it works for me.
