There is always that possibility, but I dont think it's an inherant problem. I had a carbon break on a deer I shot this year, but both pieces were on the outside of the body, same as aluminum often does. I looked the two pieces over good to make sure there was nothing missing, there wasn't. If it does happen, use caution and good judgement with the meat handling, carbon slivers can be very nasty, as I found out this summer shooting target. As Jeff says, they seem to tend to break more right at the tip end.
