I clean and butcher my hogs about the same way as I do my deer.I make a lot of sasuage each year.I will keep the ribs for BBQ and the rest goes into sasuage,some times we save the neck to go with rice.
I have two wild hogs in a pen that I traped a few weeks ago.we are going to butcher them next Tuesday and make sasuage Wed.

theres not that much difference in the way you clean them.for me that is.[:-]
