Maybe all the deer? or all the caribou? or all the sheep?

Have any personal slams/quests you're going for amongst the list...?

Seems like most are possible to get, although there exist a few that would be rather difficult to get/pay to hunt etc... ie polar bear, desert sheep, etc...
