JMO, having used the .243 on dozens of deer and pronghorn since 1978, 80 grain bullets will achieve exactly what you intend to avoid in regard to tissue damage unless you slow them down to 100 grain velocities. Best just to use 100 grain on deer, save the 80s for long coyotes or for prairie dogs.
When I'm not shooting green box CoreLokts, I generally load Hornady Interlocks as well. I found long ago that Sierra GKs left their jackets behind them too often. Never felt the need for Noslers.
