Our bear season starts in September. And it is of the utmost importance that once that bear is shot, its skinned, meat washed and then cooled ASAP. That is how you make good bear meat. And again, before you cook that, make sure there is no fat on it. Bear steaks cooked over a open camp fire are just plain hard to beat for eating.
