Default TOO PATIENT? or NOT PATIENT ENOUGH?

I thought I'd see what ya'll think about a set-up of mine. I have some bait out with a ladder stand overlooking it. The stand is on the south end of a 12 acre field in a hedgerow with a thick patch of over grown Christmas trees behind me that I can't even see through. The bait(deer) is out in the field 20 yds. and about 35 yds. from me. Once they've found the bait will they always approach from downwind? I can't see them until they're in the field or directly under me. I hunt it at night and I don't use a light(when there's snow). Should I call at all? Or should I try to stick and move with a red light. I don't use a light alot because it's mostly thick brush and woods with a few fields.
