Absolutely, a deer will take the path of least resistance if they are not under pressure to move fast. These days deer are somewhat conditioned to human scent and activity. So depending on the time of day even if the logging road is still in use it would not be uncommon to find deer traveling on it when nobody is around. Set up a trail cam where you have seen the tracks and you should be able to find out what's coming through and when. I would also suggest finding a mentor in your area to help you get started.
