Every arrow I have ever shot a deer with has completely passed through it, save one. That one was the 2nd shot at a deer I had hit in the gut and the only reason it didn' t go through was b/c it hit the ground as it was coming out the other side (deer was bedded down at the time). I shoot fixed-blade Zwickey heads.

But go figure this - I shot a coyote a few years back and my arrow only passed halfway through.

I don' t think it matters what type of head you shoot, if you hit a deer in the shoulder it' s not going to pass through. The key is just to get enough penetration to hopefully get at least one lung and then still be able to find the deer.
