Good question! I think it must have something to do with holding the other ingredients together - sort of like a glue to keep the baking soda and peroxide mixture intact and on you/your clothes. Is that opinion based on my years of studying chemistry you ask? Well, no...but I did stay at a Holiday Inn Express last night!
