Default Help with deer jerky

I tried to make deer jerky last year using some jerky seasoning packets. I thought I had it nailed, the jerky tasted great, but after about a week it started to mold....horrible waste.

I am guessing I cut it too thick and did not dry it enough.

Any tips would be appreciated. How do you store it once it is made? What is the best seasoning/persevative packet?
