Just cut the wings off and rinse off the slime. Then bake them like any other filet. The skin is easier to take off after they cook, but if you like you can remove it first. Some people actually make triangle cuts in the wings and filet them out, but I have found it much easier to just slice the wings off. You will feel the spot to slice. If you get too close to the body you will start cutting guts. If you lay them on a sandy soil or lawn and let the knife go down into the dirt as you cut the wing off it will be much easier than trying it on a table. Trust me. I clean 20 or 30 of these a night sometimes on ym charters. Best of luck!
