Wouldn't worry about it. Blood is not infective, would have to come in contact with nervous tissue, brain, spinal cord or large nerve. Not a danger while skinning.
Saliva is infective but unless you had your hands in it mouth right after you killed it shouldn't be a bid deal.

Coyotes are not common carriers of rabies. Skunks, coons, and bats would be the most common.
