RE: Bear Meat
I' ve butcher four Bear on my own and helped with many others and found it always to be more of a task than doing a Deer. The cuts are little different and since mine were all fall kills, there was always a lot of greasy fat to cut out and trim off. Unlike Deer, the fat is more marbled with the meat than layered on or inbetween.
Some of the cuts are very good as stated above but I found that it made great sausage once the fat was removed, mixed 1/3 pork with 2/3 Bear and then add whatever spices you prefer for the type of sausage you are making.
