I've butchered an elk, antelope, 2 mule deer, 3 whitetails and countless pigs with mine. I guess I'm not a much of a metalurgist because they seem to do a pretty good job for me.
I do think that the "kit" is somewhat of a gimick though. I tend to just use the large butcher knife, the caper knife and the sharpner. I've used the other knifes, but not much. You might look into buying the knifes you would actually use and a nicer cutting board and end up better off.
My friend got a $30 kit at gander mountain and that was junk.
