SWThomas...I'm guessing you might be referring to the Buckwheat in your plot.
If this is the one, then its definitely Buckwheat. The only downside to not cutting this, is it could go to seed and become a unwanted plant later. Deer usually eat buckwheat, but its pretty far down on the list. If deer aren't touching it, then I would cut it rather then take a chance of it going to seed. Its very easy to cut and kill. Its a short lived annual and won't try to regrow. Frost might be a while in your area, otherwise I would just wait for that to kill it.
Winter Wheat looks a lot like Winter Rye and Oats when its growing. Here's a pic of Winter Wheat planted 5 weeks ago.
