Good Job! A tip for you for next year to make it a little easier on the pack out. Get on DOW's website and order the "Down to the Bone" video. Best money I ever spent! If you leave the bones & hide behind, it's usally more than 100+ pounds less to carry out, plus I've found that getting the meat off the bone helps it cool off faster and therefore tastes so much better, seems to be more tender too for some reason
