Food sources and richness of the soil can factor, but you're all missing the main reason deer are larger in one area than another. There are several sub-species of deer and they tend to be larger as you move from the southern to the northern latitudes. A large buck in Texas might weigh 175 and a buck in Canada could weigh as much as 400 lbs.
