cut the tails off to bleed them out. and when you fillet, do NOT leave any red meat on them. There are some links around here somewhere on how to fillet asian carp which work for commons as well. don't listen to any bull**** about cooking them on a board and eating the board. Those jackasses don't know how to do them right. carp are actually good eating with minimal work.
