Boil that joker first with a little creole seasoning until it gets real tender. Put in a roasting pan with onions, carrots and a little bit of water and place in the oven and cook for about an 1.5-2hrs. Get a package of that good ole mCcormick gravy mix, add it and let cook for another 30mins. Grab a fork and sit indian style on the floor because the next time you open the open, you will be digging in.
