Handles nailed it.. The key is to remove every bit of fat you can get off it...Also applies to woodchuck and beaver... Also you should remove the glands (kernels) on the inside of the shoulders and the small of the back inside the body cavity... I've had young coon and enjoyed it...Thought it was similar to rabbit...
