In a word...yes. V-Max and other varmint bullets at those velocities will tear up pelts quite often. One of the best, if not the best, bullet for pelts out of the 22-250 is the Sierra 55gr Gameking #1365. These bullets are much tougher than varmint type bullets and will generally leave a quarter sized exit. Out of all the bullets I have shot out of the 250, the 1365 is head and shoulders above the others for quick kills and minimal pelt damage. One other bullet you may look at is the Hornady 52gr HP Match. They do not tend to fragment as quickly as the V-Max and usually have less pelt damage. Good Luck.
Those three bullets are my favorites for shooting in my .223. I use the Gamekings more than anything, mainly because I need the penetration when I run across wild hogs.
The last few winters have been mild, so the pelts here have been worthless, but I was using a lot of V-Max bullets and I never had much of a problem with exit wounds. Most of the time, nothing ever exited. But I was shooting them a lot slower than you are. If they are exiting, try slowing them down some if you can. They will still fragment and kill cleanly, they just won't blow out as bad.
