Do you know what your draw length is? If it's around 28", then I'd recommend 2016 to start with.

As far as the rest goes, I might be against the grain. Most of my recurves shoot better with an rest as opposed to off the shelf. I like the rubber bear flipper type rest. I've tried other more expensive types but always come back to it. I modify if a little on the bottom though (I take maybe 1/8" off). If you are going to shoot off the shelf, then get something spongy like carpet, side plate can be leather. My favorite stuff comes from Great Plains. You can also go with seal skin which can be used for both the shelf and side plate. The stufff is too expensive for my tastes though for any added benefit. For recurves and selfbows, I just use leather.
