Cant help you with a turkey, but I did a paper on this very subject in college.
About 7% of a deer' s body weight is made up by blood. So a 100 lb. deer would have 7lb' s of blood. A whitetail' s blood has about the same density as Milk, and a gallon of milk weighs about 7lb' s. So a 100lb deer has about a gallon of blood in it' s body. Pike
