Have ya ever cooked one in the ground? It is awesome, the meat falls off the bone. That's the way we used to cook goats when I was growing up.
Hey Rev, before we started to usethe constuction blockPit I have postedbefore.............I would try to find me a spring from a baby bed and make a rectangular hole in the ground a little smaller than the spring. Throw some dried heavy limbs in the pit of Oak and Hickory until they became hot coals. Then placesome stones on the four corners of the pit and place the spring on top of them.The pig has been split on the bottom all the way up including the head. Place the splitpig on the spring and brush on some KirbysMojowith a 4" brush. Then cover the pig with some corrugated roof tin.

Evey 1/2 hour brush on some Mojo and throw some Guava leaves in the pit...WAAAAAAHOOOOOOO what a Lechon, Mijo........

Half the fun of hog hunting is hog cooking and eating. I'm happy to have someone bring me a hog.
