I used only one can of mild to 2 cans of medium .... my thought is to use one can medium to 2 cans mild ... the beans should kill some of the heat for her AND my eldest daughter and I will use pepperjack cheese to kick it up for ourselves.
As far as the smokey flavor ... she loses ...we ALL loved that part
I guess you could cut down the portions and make a bowl of only mild for her (remember to put it in a Gerber jar for her
) and make the normal recipe for everyone else.
