All you need is a good set of knives and a large cutting block - preferably one that can hold a back leg quarter.

My wife has a kitchen-aid mixer / food processor, I bought the meat grinder attachement and now grind my own burger. I add 1 lb of bacon for every10 lbs of venison. Good stuff!
