For the past two seasons we have had it all ground into burger. It is cheap to have done and easy to cook with. It makes DYNAMITE chili and speghetti, also antelope burgers on the grill are JUST RIGHT!!

If they haven't been running, you get their hide off, and quarters in a cold cooler ASAP. I personally would eat antelope over deer or elk anyday. Some folks might argue that point, but if they are done correctly. They are very good table fare. GOOD LUCK on your hunt.
