I grew up eating deer and cattle liver. I like it a lot.
However, as my career began to take roots in my early 20's in the commercial cattle feeding industry and after "posting" (autopsy) many dead feedlot cattle and observing their livers..........eat whatever you want, but I think I'll hold out for some backstrap or a ribeye.
