I like to pull the deer on top of a hump and back up to it. Then I just grab the deer by the horns and pull him in. It helps to put a rope on its horns so you can lift the horns up and get ahold of them.
I am not a big strong guy. I weigh 165#. The last deer I loaded this way weighed 175#. I have loaded deer over 200# this way. As long as you can get good traction it works great.
