I have great luck with liver. As Chuck said its hard to keep it on the hook so what I always did when I used liver I would wrap it up with a small wrap of the wife's stocking and twist it up with a twist tie and just hook the stocking with the liver in it. Go out the night before with a can of dog food and punch holes in it and throw it in the spot you want to fish. When you come back the next morning the catfish will already be there waiting for you.
