I try to stay as close to 220deg. as possible.....but I have the cheap thermometer tha came on the cooker. I suppsoe with the outside temps taken into effect......I'm getting 230-240 on the rack. I've never put a rack thermo on it. I just know MY cooker.
12 hrs is the key. When you reach in and pull the bone out of the butt.....it's done.
