RE: Favorite Kind of Meat?
I've had some excellent and very poor wild game. I find that hardly any of it is exactly like anything else. It depends largely on how it taken, where and when, what its primary diet consisted of, and how it was cared for after being taken. Of course, the cook has a lot to do with it too.
I've only had a bit of elk, it was good, though the bit I had was woefully overdone. The moose I have eaten was very nice, as was the bear and the buffalo I had was great. All in all though, I am still a fan of good old venison. I fancy dove, quail and duck quite a bit as well.
If I had to pick one, back in the college days when we used to semi-professionally hunt wild pigs, we would often take hold of suckling pigs and cook them whole over the coals or if we were hunting, in the oven. Stuffed with apples and stuffing... little salt and pepper those little porkers were fit for a king. No bigger than your average beagle most of them... some the size of a big tom cat... all of them just flat out delicious!
