No doubt it will work good, 270. But 180grs is where the 308 starts to sag a little due to limited case capacity. And as has been stated, you don't need 180gr for deer. A well placed 150 gr will drop any deer that ever lived and you'll have the advantage of considerable more speed and a flatter trajectory. 165 gr would be good compromise if you just want a heavier bullet.
