Thats the only way to go as far as I' m concerned if you don' t have a horse. You can bone out an elk (I leave hind quarters with bone on) without even gutting it out. If it' s on your back, you don' t want any extra weight to carry. I don' t bring my elk to a processing place so I have to do it anyway. Carry game bags to keep meat clean!
