I have never ate a coon but if they are like opposumes it is best to get them cleaned as soon as you possibly can after shooting them. All I do for opposumes is lop off the head, feet, and tail. Then I skin and gut the booger as fast as I can before I loose my will to eat the thing. Even then I still use a lot of seasoning to counter the possibility of the gamey taste.
